Pork Sausage Ragu

Ingredients

  • Garlic – sliced
  • Red onion - Diced
  • Pork Sausage Meat
  • Tomatoes - Chopped & blended
  • Red wine
  • Half an orange
  • Fennel Seeds
  • Dried Chili Flakes
  • Salt & Pepper

Method

  1. 1.
    Brown off all the pork sausage meat in small batches and place to the side.
  2. 2.
    Sautee off onions & garlic in olive oil and cook out until just starting to go soft.
  3. 3.
    Add the fennel seeds & chili flakes and sauté for 2 minutes
  4. 4.
    Add the meat back into the pan and deglaze with the red wine
  5. 5.
    Add blended tomatoes, 2/3 of the stock & orange bring to the boil and turn down to a rolling simmer for about 2 hours
  6. 6.
    Adjust seasoning to taste
