Pork Sausage Ragu
Ingredients

•Garlic – sliced

•Red onion - Diced

•Pork Sausage Meat
-
•Tomatoes - Chopped & blended
-
•Red wine
-
•Half an orange
-
•Fennel Seeds
-
•Dried Chili Flakes

•Salt & Pepper
Method
-
1.Brown off all the pork sausage meat in small batches and place to the side.

2.Sautee off onions & garlic in olive oil and cook out until just starting to go soft.

3.Add the fennel seeds & chili flakes and sauté for 2 minutes
-
4.Add the meat back into the pan and deglaze with the red wine
-
5.Add blended tomatoes, 2/3 of the stock & orange bring to the boil and turn down to a rolling simmer for about 2 hours

6.Adjust seasoning to taste
